Diya Boondi Laddu Diwali Recipe:

Diya boondi laddu are made with gram flour, turmeric powder, sugar, and water. The gram flour is mixed with turmeric powder to give the laddus their characteristic yellow color. 
Ingredients:
  • 1 cup gram flour (besan)
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1/4 cup oil, for frying
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 teaspoon cardamom powder
  • Ghee, for greasing
Instructions:
  • In a bowl, combine the gram flour, salt, and turmeric powder.
  • Heat the oil in a deep frying pan over medium heat.
  • Drop the gram flour mixture by tablespoons into the hot oil to form small boondis.
  • Fry the boondis until golden brown and crispy.
  • Drain the boondis on a paper towel-lined plate.
  • In a saucepan, combine the sugar and water.
  • Bring the mixture to a boil over medium heat, stirring constantly until the sugar dissolves.
  • Reduce the heat to low and simmer for 5 minutes, or until the syrup reaches a thick consistency.
  • Remove the pan from the heat and add the boondis and cardamom powder.
  • Stir until the boondis are coated in the syrup.
  • Grease your palms with ghee and roll the boondi mixture into small laddus.
  • Serve the diya boondi laddus immediately or store them in an airtight container for later.

Diya Mysore Pak Diwali Recipe:

Diya mysore pak are made with ghee, milk, sugar, and gram flour. The ghee is melted in a pan, and then the milk and sugar are added. The mixture is brought to a boil, and then the gram flour is added. 
Ingredients:
  • 1 cup ghee
  • 1 cup milk
  • 1 cup sugar
  • 1/4 cup gram flour (besan)
  • 1/4 teaspoon cardamom powder
Instructions:
  • Heat the ghee in a heavy-bottomed pan over medium heat.
  • Add the milk and sugar and bring to a boil, stirring constantly.
  • Reduce the heat to low and simmer for 10 minutes, or until the sugar dissolves and the mixture thickens.
  • Add the gram flour and cardamom powder and stir until well combined.
  • Increase the heat to medium and cook for 5-7 minutes, or until the mixture thickens and leaves the sides of the pan.
  • Pour the mixture into a greased 8-inch square baking pan.
  • Let the mysore pak cool completely before cutting into squares and serving.
To make diya-shaped mysore pak:
  • Once the mysore pak has cooled completely, cut it into squares.
  • Using a cookie cutter, cut out diya-shaped pieces from the mysore pak squares.
  • Place the diya-shaped mysore pak on a serving platter and serve.
